Jhatpat Vegetable Khichdi


This dish is a saviour. There are times when you dont feel like standing long hours and rolling those chapatis. But at the same time want to make a nutritional meal with dal and vegetables.
In these situations you can make this vegetable khichadi. Sometimes i even put all the leftover sabzis in it to consume them.



Ingredinets
1 Cup rice
1/2 cup Tur Dal (Yellow Lentils)
1 chopped Onion
1 Chopped Tomato
2 cups of diced vegetables (Cauliflower, Carrots, Bottle Gaurd, Green Peas, capsicums, potatoes)
1/2 tsp haldi
1 tsp Red Chilly powder
1 tsp Garam Masala
1 tsp Sambhar Masala (Optional)
1 Lemon
2 tsp Ghee
1/2 tsp Hing
1 tsp Cumin Seeds
Coriander Leaves for garnishing
Salt to taste


Method
1. Wash and soak the Rice and Dal in a vessel
2. In a Pressure cooker heat the ghee and then add the cumin seeds and hing
3. Now add the chopped onions and fry for 1 min.
4. Now add the tomatoes and other diced vegetables
5. Add all the masalas and Mix well.
6. Cook for 2-3 Min and then add the soaked Rice and Dal.
7. Add 3 to 4 cups of water and salt to taste.
8. Now pressure cook till one whistle and let it cook till the steam eases out.
9. Now open the lid and add the lemon and coriander leaves and mix well.
10. Your delicious and healthy Khichadi is ready to eat..!!
