Ingredients
1/2 kg Pumpkin
1/2 tsp methi seeds
1/2 tsp jeera (Cummin)
1/2 tsp Rai (Mustard)
few curry leaves
1/2 tsp Haldi powder
1/2 tsp Red Chily powder
salt to taste
1 tbsp Sugar
2 tsp Raw mango pulp OR 1 tsp Amchur powder
1 tbsp Oil
Method
1. Remove the skin of the pumpkin and cut it into small pieces
2. In a Pan, heat some oil and add the methi, jeera and rai and let it crackle.
3. Now add the curry leaves and fry for few seconds
4. Now add the pumpkin pieces and mix well
5. Add all the masalas and mix well.
6. Add a little water and let it cook for 7-8 min on low flame with lid closed.
7. Once the pumpkin is cooked, now add the sugar and raw mango pulp (or amchur powder) and let it cook for another 2 min.
8. Your sweet and tangy Pumkin sabzi is ready to eat. Serve it with hot rotis...!!
