Vegetable Biryani


Ingredients
2 bowl Basmati Rice
2 Onions 
1 Potato
250 gm Cauliflowers
2 Capsicums
2 Carrots
100 gm Cabbage
1/2 bowl Green Peas
1/2 bowl Soy Nuggets (Nutrella)
1/2 bowl Dry Fruits (Cashewnuts, Almonds)
1 tsp Biryani Masala
1/2 tsp Pav Bhaji Masala
1/2 tsp Turmeric Powder
1/2 tsp Cumin Seeds
Salt to taste
1/2  bowl Oil

Method
1. Cut all the vegetables in length and soak the Nutrella in water.
2. Now in a Pan add 3-4 tbsp Oil and let it heat. Fry the Cashewnuts and Almonds till golden brown and keep aside.
3. In a bowl add the Onions and mix well with salt and Turmeric powder. Now put this onions in the pan and fry well till they are golden brown and keep aside
4. Similarly fry all the vegetables one by one and remove and keep them aside.
5. Now in a Pressure cooker, take some oil and add the cumin seeds.
6. Now add the rice along with the biryani and pav bhaji masala and mix well.
7. Fry the rice with masalas for 2-3 min stirring it properly.
8. Now add all the fried vegetables , dry fruits, Nutrella and green peas expect Onions to the rice and mix well.
9. Now add 4 bowls of water to the rice and mix well. Add salt as per taste.
10. Pressure cook the rice on high flame. After 2 whistles close the flame and let the rice rest.
11. After 15- 20 min, open the lid and now add the fried Onions and mix it with the Biryani with very light hand.
12. Your Vegetable Biryani is ready to eat.
