I call this as Vegetarian Bhurji. Here i present a protein rich bhurji for vegetarians..!!
1 cup soybean Granules
1 Tomato finely chopped
1 Onion finely chopped
1/2 tsp Haldi Powder
1/2 tsp Red chili powder
1/2 tsp cumin seeds
Coriander leaves for garnishing
1/2 tbsp oil
salt to taste
1. Soak the soybean granules in warm water for 2-3 min. Drain and squeeze the water out.
2. In a pan take some oil, add the cumin seeds and let it crackle.
3. Now add the chopped onions and fry for 1 min.
4. Now add the chopped tomatoes along with the remaining masalas
5. Cook the tomatoes for 2-3 min and then add the soaked soybean granules.
6. Mix properly and let it cook for 3-4 min with lid closed.
7. Close the flame and garnish with chopped coriander leaves.
8. Your vegetarian version of protein rich Bhurji is ready.
