Soy nuggets are very rich in protein and very healthy to eat. They can be used in variety of dishes.
The recipe that i am sharing is one of my favorites from school time. I used to love it in my tiffin box with parathas. Its very easy and jhatpat to make.
Here i have used only onion and tomato. But you can also add some more vegetables like capsicum, carrots etc all finely chopped.
Ingredients
2 cups of Medium size Soya Nuggets (Nutrela)
1 Onion finely chopped
1 Tomato finely chopped
3-4 Garlic cloves finely chopped
1/2 tsp Haldi (Turmeric) powder
1/2 tsp Dhaniya (Coriander) powder
1/2 tsp Red Chilly powder
1 tbsp Oil
Salt to taste
Fresh coriander leaves for garnishing.
Method
1. Soak the nuggets for 4-5 min in warm water. (You can just heat it in micro-safe bowl with water for a min and then let it stay for 4-5 min)
2. Now in a pan take some oil and put the jeera.
3. Now add the chopped onions and garlic and fry till golden brown.
4. Add the tomatoes and all the masalas and cook till the tomatoes become soft.
5. Squeeze the water out from the soaked soya nuggets and add it to the pan.
6. Mix well and let it cook for 4-5 min on low flame with lid closed.
7. Garnish with fresh coriander leaves.
