Gajar ka Halwa

Ingredients

4 cups Grated Carrots (Gajar)
3 cups Milk
1 cup Sugar
1 tsp Ghee
Few cashew nuts and raisins
3-4 Cardamom (Elaichi)

Method

1. In a pressure cooker, add the grated carrots and 1 cup milk and cook till one whistle.
2. After 1 whistle, close the flame and immediately remove the steam and open the cooker, otherwise the carrots will leave their water
3. In the meantime in another pan, add the remaining milk and bring it to boil. Try to reduce the milk till it becomes thick.
4. Now add the steamed carrots from the cooker to the pan with milk and mix well.
5. On high flame, cook the carrots till all the milk is thickened and the mixture becomes dry. It will take around 10 mins.
6. Once the mixture becomes dry, add the sugar and again mix well.
7. Again on a high flame, roast the mixture till all the water evaporates.
8. Add add one tsp Ghee and cardamom powder along with the cashew nuts and raisins.
9. You can roast this mixture for another 3-4 min. The more you roast, the more tastier the halwa is.
10. Your yummy gajar ka halwa is ready. Serve it hot.
