Ingredients
6-7 Tinde (Apple Gourd)
1 Medium sized Onion
2 Medium sized Tomatoes
1-2 Tbsp Oil
Fresh Coriander leaves
For Bharwan Masala
1 1/2 tsp Coriander Powder
3/4 tsp Saunf Powder
1/2 tsp Haldi Powder
1/2 tsp Red Chilly Powder
1/2 tsp Jeera Powder
1/2 tsp Amchur Powder (dry mango)
1/4 tsp Garam Masala
Salt to taste
Method
1. Wash and peel the tindas.
2. Now give 2 cross slits to the tindas from the center taking care that you don't cut it into 2 parts.
3. In a bowl mix all the dry masalas mentioned above.
4. Now take one tinda and fill in this masala in both the slits given to the tinda.
5. Similarly fill in the masalas in all the tindas. Take care to fill the masala generously.
6. Keep the remaining masala aside.
7. Now in a pan take some oil and let it heat.
8. Now put all the tindas in the pan and let them cook on a medium flame with lid closed.
9. After 2-3 min slowly turn the tindas upside down. Similarly after 2-3 min keep on changing the sides to avoid burning.
10. Let the tindas cook for 8-9 min or till the tindas are soft and cooked on all side.
11. Once the tindas are cooked properly remove them from the pan and keep in the serving bowl.
12. Now in the same pan add the chopped onions and saute it golden brown.
13. Add the chopped tomatoes and the remaining masala that we have in the bowl.
14. Cook the tomatoes till they are soft and blended with the masalas. Add some salt if required.
15. Now pour this masala over the tindas in the serving bowl and garnish with chopped green coriander leaves.
16. Server hot with Rotis or Rice.
