Fresh fruit cake is loved by all in my family. Nowadays lot of fresh fruits are available in the market. But desserts means lot of calories so people don't prefer to have them.
For all the sweet lovers Sugar free Natura is now available in the markets. It has negligible calories and can be used as a substitute to sugar for any of your recipes.
I have recreated my favourite Fresh Fruit Cake with the sugar free natura which has come out very well.
Ingredients
1 cup Maida
1 cup Yoghurt (Curd)
1/2 tsp Baking soda
1 tsp Baking Powder
1/2 cup Olive Oil (Normal cooking oil can also be used)
1 tsp Vanilla essence
1 tbsp Milk
18-20 sachets of Sugar free Natura
For Topping
3/4 cup cream
5-6 Sugar free Natura
Fresh fruits (apple, oranges, strawberries etc.)
Method
1. Take a large bowl and mix the yoghurt and sugar free Natura. Beat it to make a creamy mixture
2. In another bowl, sieve the maida twice and keep aside
3. Now add the baking powder and baking soda to the creamy mixture and mix well (try to mix it either clockwise or anticlockwise only).
4. You will see some bubbles forming in the mixture. Keep the mix to rest for 4-5 min.
5. You can now add the vanilla essence and olive oil and mix well.
6. Now slowly add the maida in small portions and mix well.
7. Blend all the maida to the mixture to form a smooth creamy mixture. You can use the milk to adjust the consistency of the mixture if it has become too thick.
8. Try to beat it for 4-5 min to form creamy and thick mixture.
9. Preheat the oven to 200 deg C for 10 min.
10. While the oven is preheated, grease a baking dish and pour the cake mixture into it.
11. Bake the cake in the preheated oven at 200 deg for first 10 min and then you cake reduce the temperature to 180 deg C for next 30-35 min.
12. Once the cake is baked, keep it to cool for 10-15 min.
To Make Whipped Cream
13. Mix the sugar free natura sachets with the cream and beat it to form a creamy texture.
Topping on the cake
14. Now cut the cake from the center into two circular halves.
15. Spread half of the whipped cream on one of the halves and then spread the cut fresh fruits.
16. Now place the other half on top of it and press gently.
17. Spread the remaining cream on the top and side of the cake and decorate it fresh fruits.
18. Now keep this cake in the refrigerator for 1-2 hrs
19. Your fresh fruit cake is ready to serve.
