Whenever I use to think of khichadi, I always got the feeling
of a sick person. My mom use to give me khichadi whenever I use to fell sick.
So I started associating khicahdi with sickness. But later, when I came across
various types of interesting khichadi, I started liking it. Have you ever
thought that khichadi can also be fantastico. Yes, it can be, all you have to do
is first stop associating it with sick person’s diet and secondly put some innovation
and flavors to make some fantatico khichadis. I am sure, if you do this, not
only you but your family will also start loving this nutritional and healthy
food item.
Let us look at some fanstatico khichadis that we can prepare
at home.
Green moong dal vegetable Khichadi
To this khichadi, you can add any vegetable that you have
and you like. Generally I put tomatoes, carrots, french beans, potatoes and
peas. Soak the dal and rice like we do for the normal khichadi. Then in a cooker,
heat some ghee and put the hing, jeera, peppercorns and green chillies. Then add
the rice and dal along with the chopped vegetables. Add some spices and seasoning
as per your taste and then add the water. Cook it as we cook the normal
khichadi. Once it is done put some lemon juice and fresh coriander leaves and
mix well. This yummy and fantastico khichadi, I am sure will be loved by your
entire family.
Sambhar Khichadi
This khichadi is similar to the above green moog dal
vegetable khichadi, only instead of using only green moong dal, use half quantity
of moong and half of toovar dal in the preparation. Also while adding the
spices, just add 2 tbsp of sambhar powder and half cup of tamarind pulp to the
khichadi. This delicious khichadi will instantly lift up your mood and you will
never again think of khichadi as a boring meal.
Dal Khichadi
This tastes almost similar to the rice and dal that we
generally eat at home, in fact it tastes better than the rice and dal. This
made with rice and toovar dal only. For this, you will have to make the dal and
rice separately first. Then in a pan, take some ghee, and add the hing and
jeera and peppercorns. Now fry the onions and then tomatoes till tomatoes are
cooked. Then add the rice and dal to this and cook till they blend with each
other properly. Add the lemon juice to add the extra zing to the khichadi. This
khichadi is so yummy that even kids eat it with such a interest.
Matki Khichadi
This khichadi is power packed with lot of proteins and
vitamins. For this khichadi, we use the moth (sprouts), rice and a green paste
made up of coriander leaves, green chillies, spinach and coconut. Cook this
khichadi in a similar manner as that of green moong dal khichadi. Just replace
the dal with the moth and add the green paste to it. This powerhouse fantastico
khichadi is very good for kids as it provides very high nutritional value to their
meal.
Daliya (Broken wheat) Khichadi
This is also very simple one. The preparation is same as
that of the basic or the green moong dal vegetable khichadi. Only replace the
rice with the daliya, rest all method is same. To enhance the taste, just roast
the daliya in ghee before cooking it.
