Potatoes, or what we all lovingly call as Aloo, i think is the most loved vegetable by everyone. Any meal without the use of aloo seems to be incomplete. In my family also aloo is loved by all. They may get bored with other vegetables but never by the fantastico aloo, the king of vegetables.
So today, lets look at different fantastico preparations that we can make with aloo. Firstly lets start with the dry form of aloo sabzi that can also be carried in the tiffin. The most easy one is the aloo fry, where you can just cut the aloo in small cubes and stir fry it in little oil with the spices like turmeric powder, red chilli powder, coriander powder and some jeera powder with salt. It tastes awesome and can be easily taken in the lunch box. The other variation is instead of raw potatoes use the boiled one with the same ingredients. Both the sabzi tastes different and awesome too.
The other form is the one which is also used in the masala dosa. Here we use the boiled potatoes and onions and temper it with curry leaves, rai, hing, same chana dal, turmeric powder and salt. So with different variations in the masalas and the tempering you can make some fastastico dry aloo sabzis.
Next let us look at the different form of curries. The most favorite one in my family is the traditional aloo mutter and tomato curry. For this, make a tomato puree with 2-3 tomatoes and a green chilli with some ginger. Then in some oil put some jeera and add the puree along with spices like turmeric, chilli, coriander powder. Saute it for some time and then add the potato cubes and green peas with salt and water and pressure cook for 2 whistles. Add the garam masala and fresh coriander leaves at the end. This one really is so simple and tastes lovely. Now to this basic curry different variations can be done. Like for example when there are no peas available i just make it with potatoes. Some times i add big pieces of onions to it. Sometimes i also add soya nuggets to it. Then other change it that instead of making a puree i just put chopped tomatoes in the curry. Also other variation in the taste is that instead of using jeera i use curry leaves and rai in the tempering. Another form is the use of curd instead of tomatoes. Here in the oil just add the jeera and the spices. Saute it some sometime and then add the water. Once the water boils add the boiled potatoes and give a boil for 3-4 min. In the end add the beaten curd and close the flame. Add the garam masala and fresh coriander in the end. All these fantastico curries should really be must tried by everyone.
Then are so many varieties of snack items which can be prepared from potatoes. The most favorite one of everyone is the aloo paratha and aloo tikki. These are the most common items of every kitchen. Then we have the aloo pakoras, french fries, aloo chaat, aloo halwa, aloo chips etc. etc. You can make so many types of snack items with aloo.
One more interesting thing about potatoes is that you can combine with any other vegetable. For example we have aloo gobi, aloo bhindi, aloo capsicum, aloo cabbage etc. It enhances the taste of the vegetable plus another benefit is that it increases the quantity of the sabzi in case you feel it cannot be sufficient for all.
